- 3 c ricotta
- 2 tsp heavy cream
- 2 tbsp lemon zest (about 2 lemons)
- 4 tsp lemon juice (about 1 lemon)
- ½ tsp black pepper
- ¾ tsp salt
- 2½ tsp olive oil
- 2 tbsp Momofuku Chili Crunch
Pass the ricotta through a fine-mesh sieve or food mill.
Place the ricotta into a food processor and add the heavy cream, lemon zest, lemon juice, pepper, and salt and mix to combine. After all ingredients are incorporated, slowly stream in the olive oil.
Place whipped ricotta into a serving bowl and drizzle Momofuku Chili Crunch on top, adding more to taste. Or, spread on a piece of grilled or toasted bread with chili crunch and fresh parsley.
