Vinegar Pickles

  • 1 medium Red onion, sliced (or other vegetable such as carrots, cauliflower, or fennel)
  • ½ cup Rice vinegar
  • 6 tablespoons Sugar
  • 2 teaspoons Kosher salt
  • 1 teaspoon Black Peppercorns (optional)

Bring rice vinegar, sugar, salt, peppercorns (optional), and 1 cup of water to a boil. Pour over the onions and let sit for a day or so. These are best after a few days—and they should last up to a month.
